Ingredients

  • 2 eggs
  • 1 dash salt and pepper

  • 1 sliced green onion
  • ¼ cup shredded colby jack cheese

Instructions

  • Choose a regular-sized microwave-safe mug. Crack the eggs into the mug, add a dash of salt and pepper, then whisk thoroughly until the mixture is uniform and slightly frothy. This aeration helps produce a fluffier texture when cooked.
  • Stir in the chopped spinach, sliced green onion, and shredded colby jack cheese so the fillings are evenly distributed. If you prefer other ingredients—such as diced bell pepper, mushrooms, cooked bacon, or ham—add them now. Keep additions small and pre-cooked if necessary to avoid excess moisture.
  • Microwave on high for about 1½ to 2 minutes. Times vary by microwave wattage; start checking at 1 minute and 30 seconds. The omelette is done when it has set through but is still moist and not rubbery. If needed, microwave in additional 10–15 second bursts until set.
  • Let the omelette rest in the mug for 30 seconds to a minute before eating. This short rest lets the heat finish cooking the center and makes it easier to remove. You can slide it onto a plate or enjoy it straight from the mug. Garnish with extra green onion or a sprinkle of black pepper, if desired.
