Today I felt the strange certainty that time is moving much faster than I ever imagined. My younger brother celebrates his 18th birthday, and the realization that he is officially an adult hit me harder than I expected. It seems like only yesterday he was small and curious, taking things apart with a screwdriver and exploring the world with relentless energy. Those memories are vivid, and yet he is now at the threshold of adulthood, making choices and creating new memories of his own.

Earlier this week, I had my car tested for its MOT. While it was being inspected, my brother took me for a drive in his car. It was a surprisingly odd experience to sit in the passenger seat and watch him behind the wheel — the same boy who used to run around the house barefoot and inquisitive. It’s a strange, proud, slightly unsettling feeling to see someone you raised become independent and capable in that way.

All of these emotions left me feeling a little overwhelmed, so I decided to retreat to the kitchen and make something comforting: brownies. Baking is a grounding activity for me — a way to slow down, be present, and share something warm and delicious with the people I love. These Dulce de Leche Swirl Brownies are rich, chocolatey, and perfectly balanced by swirls of caramel-like dulce de leche. They are ideal for celebrating small milestones or quiet, reflective moments.

Ingredients

  • 90 g good quality dark chocolate
  • 150 g unsalted butter
  • 300 g light brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 125 g plain flour
  • 25 g cocoa powder, I use Green & Blacks
  • 1/2 tsp baking powder
  • Pinch of salt
  • 400 g dulce de leche

Instructions

  • Preheat the oven to 180°C (350°F). Grease and line an 8 x 8 inch (20 x 20 cm) baking pan with parchment paper, leaving some overhang for easy removal.
  • Break the dark chocolate into pieces and place it in a heatproof bowl with the unsalted butter. Melt gently: either microwave in 20-second bursts, stirring well between each burst until smooth, or melt over a bowl set above simmering water (a bain-marie), stirring until fully combined. Be sure to stir thoroughly after melting, as chocolate can appear melted but still hold small, unmelted pieces.
  • Allow the chocolate and butter mixture to cool slightly. In a large bowl or the bowl of a stand mixer, combine the light brown sugar, eggs, and vanilla extract. Beat on medium-high speed until the mixture is smooth and well combined, about one minute.
  • Sift the plain flour, cocoa powder, baking powder, and a pinch of salt together into a separate bowl to remove any lumps and ensure even distribution of dry ingredients.
  • Add the melted chocolate and butter to the sugar and egg mixture. Mix until fully incorporated and smooth, scraping down the sides of the bowl as needed.
  • Gently fold in the sifted dry ingredients on a low speed or by hand until just combined. Avoid overmixing to keep the brownies tender and fudgy.
  • Spoon the dulce de leche over the brownie batter. Using a spatula or the tip of a knife, swirl the dulce de leche through the batter to create generous ribbons of caramel — do not fully incorporate; the contrast in texture and flavor is what makes these brownies special.
  • Transfer the batter to the prepared pan and smooth the surface gently, taking care not to overwork the swirls you created.
  • Bake in the preheated oven for 25–30 minutes. A skewer inserted into the center should come out with a few moist crumbs attached; this indicates a fudgy, moist center. Baking times can vary slightly depending on oven calibration and the exact pan used.
  • Remove the pan from the oven and allow the brownies to cool completely in the tin. Cooling fully helps them set and makes slicing cleaner.
  • Once cooled, lift the brownies from the pan using the parchment overhang and cut into 9–12 bars, depending on preferred portion size. Store in an airtight container at room temperature for up to four days.
