  • 1 ½ cups Enchilada Sauce
  • 18 corn tortillas or flour tortillas
  • Salt and pepper to taste
  • 1 ½ pounds ground beef
  • ¼ cup canned chiles
  • 3 cups grated Cheddar cheese or a combination of Cheddar and Pepper Jack

Instructions

  • Preheat the oven to 350°F.
  • If the sauce is cold, warm it in a large frying pan.
  • Spray a 13×9-inch pan with cooking spray and spoon a thin layer of enchilada sauce over the bottom.
  • Season the ground beef with salt and pepper, then brown it in a skillet until cooked through.
