Casseroles are a go-to for quick, satisfying meals and adaptable side dishes. This Carrot Casserole pairs well with almost any main course and brings a buttery, cheesy richness that complements the natural sweetness of carrots.

How to make Carrot Casserole:

Cook the carrots: Briefly steam or simmer the carrots so they are tender but still slightly firm.

Make the cheese sauce: Prepare a roux with butter and flour, whisk in milk and half-and-half, then stir in shredded cheddar until smooth.

Assemble and bake: Place the cooked carrots in a casserole dish, pour the cheese sauce over them, top with crushed Ritz crackers, and bake until heated through and the topping is golden.

Ingredients:

  • Baby carrots — or use peeled and sliced regular carrots.
  • Unsalted butter — divided; use a little less salt if using salted butter.
  • Yellow onion — diced.
  • All-purpose flour — for the roux.
  • Seasonings — salt, pepper, dry mustard and onion powder.
  • Milk — 1% or 2% works well.
  • Half-and-half — equal parts milk and cream; you can combine cream and milk if desired.
  • Shredded cheddar cheese — for a creamy, savory sauce.
  • Crushed Ritz crackers — for a buttery, crunchy topping.

Do you need to pre-cook your carrots?

Yes. Carrots are firm and starchy, so pre-cooking them ensures a pleasant, tender bite in the finished casserole. Steaming or simmering briefly prevents them from being raw while also avoiding an overly mushy texture—just don’t overcook before baking.

Should you cut your carrots?

Baby carrots were used here, so no cutting was necessary. If you prefer, slice regular carrots into rounds or sticks for quicker cooking and a different presentation. Choose the style you and your family enjoy most.
