Ingredients for Bacon Cheeseburger Sliders

  • 80/20 ground beef — the fat ratio keeps sliders juicy and flavorful.
  • Bacon — thick-cut hickory smoked works great, but use your preferred bacon.
  • American cheese — melts nicely; switch to cheddar, provolone, or Swiss if you prefer.
  • Hawaiian sweet rolls — soft and slightly sweet, they elevate the sliders.
  • Beef seasoning — use your favorite beef rub or seasoning blend.
  • Diced onion — yellow or white onions add savory sweetness when cooked.
  • Butter — to spread on the rolls before toasting.

Helpful Tools

  • Blackstone griddle or similar flat-top griddle
  • Parchment or wax paper for forming the beef
  • Griddle spatulas for flipping and transferring the patty
  • Measuring spoons and cups
  • Sharp knife and cutting board

How to Make Blackstone Bacon Cheeseburger Sliders

Preheat the Blackstone to low heat. While it warms up, prepare the beef and buns.

Spread the ground beef on a sheet pan lined with parchment or wax paper and press it into a rectangular shape slightly larger than the sheet of Hawaiian rolls. Set aside.

Slice the sheet of Hawaiian rolls horizontally so you have a full top sheet and a full bottom sheet, then set aside.

When the griddle is hot, cook the bacon until crisp. Move cooked bacon to the side and add the diced onions to the bacon grease. When the onions are nearly translucent, season them with the beef seasoning and toss to coat.

Form the seasoned onions into a rectangle on the griddle roughly the same size as the beef sheet. Carefully flip the beef rectangle onto the onions, then cook the beef until it is just over halfway done and a slight crust has formed. Flip and finish cooking the other side.

Chop the cooked bacon and sprinkle it over the melted cheese. Add the top sheet of rolls, then slice into individual sliders and serve immediately with your favorite condiments.

What to Serve with Blackstone Bacon Cheeseburger Sliders

Classic sides like fries or loaded fries pair perfectly with sliders. For lighter options, serve grilled vegetables such as cauliflower, sweet potatoes, or zucchini. BBQ baked beans are also a great complement.

How to Store Leftover Bacon Cheeseburger Sliders

Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep condiments separate to avoid soggy buns. Reheat sliders in the oven until warmed through; freezing is not recommended for best texture.

Can I use different cheese?

Absolutely. American cheese melts well, but sharp or mild cheddar, provolone, or Swiss are all delicious alternatives.

What temperature should a griddle be for sliders?

Aim for a griddle temperature between 350–400°F. An infrared thermometer helps confirm the surface temperature for even cooking.

Pro Tips!

  • Use a thermometer to check internal temperature; cooked burgers should reach 160°F.
  • Serve a platter of toppings—sliced tomatoes, lettuce, pickles, and avocado let guests customize their sliders.
  • The seasoned onions add flavor to the patty; you can also season the beef before forming the rectangle for extra taste.
