How to Make a Caprese Chicken Sandwich
1. Lightly toast the bread slices.

2. Slice the tomatoes into eight even rounds.
3. Split each chicken breast horizontally with a fillet or chef’s knife to make four thin, even pieces.

4. Season the chicken with coarse salt and freshly cracked black pepper.
5. Heat the olive oil in a large skillet over medium-high heat and fry the chicken until cooked through, about 3–5 minutes per side depending on thickness.

6. Preheat your broiler to high.
7. Arrange the toast on a broiler pan and top each slice with a cooked chicken piece.

8. Add two tomato slices to each sandwich, then place two slices of mozzarella on top of the tomatoes.


9. Broil the sandwiches until the mozzarella melts and bubbles, about 3–5 minutes—watch closely so the bread doesn’t burn.
