When blackberries start falling from the vines by the bucketful, this indulgent sandwich is the thing I crave.

I usually can only finish half of one of these — though I’m guilty of sneaking blackberries and a little cheese while I cook. Every bite is worth the wait through the rest of the year.
As the sandwich cooks, the berries warm and burst slightly, mingling with the cheese and drifting down the sides to create sweet, summery goodness right in your pan. Ingredients Needed for 4 Large French-Toasted Blackberry Grilled Cheese Sandwiches
- 3–4 eggs
- 1 tablespoon whole milk or half-and-half
- 8 slices Texas toast-style bread
- About 1 quart blackberries
- 8 oz Fontina or cream cheese
- 2–3 teaspoons brown sugar (to taste)
- 1/4 teaspoon cinnamon
- Powdered sugar to sprinkle
- Butter for the pan
Process
Warm a skillet over low heat and melt 1 tablespoon butter. While the butter is warming, combine the cheese, brown sugar, and cinnamon, then spread that mixture on one side of each Texas toast slice.

In a small bowl, beat the eggs with the milk. Using a pastry brush (or spoon), generously coat the opposite side of each bread slice with the egg mixture — one side for the cheese, one side for the egg wash.

Place a slice of Texas toast into the heated pan with the egg side down and the cheese side up. Add a few blackberries on top of the cheese. Cook until the egg side is a golden brown — you may need to peek under the edge with a spatula to check the color.
While the bottom is toasting, heavily coat one side of another bread slice with the egg mixture (this time no cheese). Place that slice egg side up on top of the blackberry-topped slice.

When the bottom is golden, carefully flip the sandwich over — use two hands, or a spatula and a hand, to keep it intact. Gently press the sandwich together (don’t mash!) and French-toast the top until it’s golden brown and the berries look plump and juicy.

Remove the sandwich from the pan once both sides are golden. Let it rest a minute or two, then very gently cut it in half to reveal the melted cheese and berries. Finish with a dusting of powdered sugar and serve with extra blackberries or a side of cantaloupe for a bright contrast.
