Why You Should Make This Cookie Dough Cheesecake
This cheesecake is a showstopper. Here are four clear reasons to bake it:
- Edible Cookie Dough – A safe, delicious cookie dough layer lets you enjoy raw cookie dough flavor without risk. It’s the dessert-lover’s dream.
- Heavenly Combination – The richness of cheesecake paired with chewy cookie dough is a naturally perfect match.
- Copycat Satisfaction – Recreating a favorite restaurant treat at home is rewarding, and you can customize it to your taste.
- Dark Chocolate Crust – The deep chocolate crust balances the sweet cookie dough and creamy filling for a well-rounded dessert.
Quick note: The finishing touches are up to you. I used a cookie dough disc on top, but you can pipe small cookie dough balls, scatter chips, or skip extra toppings — it will be delicious either way.

Ingredient List – Cookie Dough Cheesecake
Here are a few key ingredients to note. For full quantities and details, see the recipe card below.
- Heavy cream – Same as heavy whipping cream, used for the whipped topping.
- Brown sugar – Adds depth and chewiness to the cookie dough.
- Mini chocolate chips – Small chips distribute evenly through dough and filling.
- Vanilla extract – Madagascar vanilla is recommended for best flavor.
- Whipped cream – For garnish and texture contrast.
- Cream cheese – Use full-fat, softened cream cheese (Philadelphia is a reliable brand).
- Eggs – Make sure eggs are at room temperature for a smooth filling.
Tips For Making This Cookie Dough Cheesecake
- Room temperature – Bring cream cheese, eggs, and butter to room temperature for a lump-free batter.
- Avoid overmixing – Mix just until combined to prevent excess air and reduce cracking.
- Even crust – Press the chocolate crumbs evenly so the crust bakes uniformly.
- Water bath – Fill the pan with water to just under halfway up the springform sides. This prevents drying and cracking.
- Scrape the bowl – Use a rubber spatula to scrape the sides and bottom for a smooth, even batter.
- Watch baking time – Bake until the center is barely set and slightly jiggly to avoid a dry cheesecake.
- Chill well – Refrigerate at least 4 hours or overnight for best texture and clean slices.
- Cookie dough thickness – Keep cookie dough layers consistent so each bite is balanced.
- Take your time – Slow, careful assembly yields the best presentation and texture.
Equipment I Used To Make This Recipe
- Springform pan – Makes removing the cheesecake easy without damaging the crust.
- Stand mixer or handheld mixer – Useful for cream cheese, cookie dough, and whipped cream.
- Bowl and spoon – Fine for mixing the crust by hand if needed.
- Rubber spatula – Essential for folding and scraping.
- Sheet pan or roasting pan – Used for the water bath and for toasting flour.
- Parchment paper – For lining pans and easy removal of baked ingredients.
- Plastic wrap – To store and shape cookie dough while assembling.
- Baking sheet for flash-freezing – Handy if freezing slices individually.
- Aluminum foil or plastic wrap – For covering the cheesecake during storage.
- Airtight container – Best for freezing to prevent freezer burn.

Frequently Asked Questions
Why use a water bath?
A water bath creates a moist, gentle oven environment that reduces cracking and prevents the cheesecake from drying out.
What if I don’t have a springform pan?
You can use a regular cake pan lined with parchment, but be careful when removing the cheesecake — it may require inverting or serving directly from the pan.
Can I make this without a stand mixer?
Yes. A handheld mixer or mixing by hand will work; just ensure ingredients are well combined and smooth.
How do I prevent cracking?
Use room-temperature ingredients, avoid overmixing, bake in a water bath, and cool gradually to minimize cracks.
What should the texture be after baking?
The center should be slightly jiggly and barely set. Overbaking causes dryness, so remove the cheesecake when the edges are set and the center has a gentle wobble.
Do I need to bake the flour for the cookie dough?
Baking the flour is a safety step to kill any bacteria if you’ll eat the dough raw. If you prefer not to bake it, use heat-treated flour labeled safe for raw consumption.

Storing and Freezing
Refrigerate the cheesecake tightly wrapped in plastic wrap or foil for up to one week. For longer storage, freeze without whipped cream or delicate toppings: wrap well, place in an airtight container, and thaw in the refrigerator before serving.
Freezing
To freeze the whole cheesecake, wrap it tightly in plastic or foil and place it in an airtight container to prevent freezer burn. Label with the date and store for 2–3 months. Thaw slices in the refrigerator before serving.

- ¾ cup granulated sugar
- 1 large egg yolk room temperature
- 2 large whole eggs room temperature
- ¾ cups mini chocolate chips
For The Top
- ¾ cup Heavy whipping cream
- 2 tablespoon granulated sugar
Instructions
For the crust
-
Preheat oven to 350°F. Lightly spray the bottom and sides of a 9-inch springform pan with cooking spray.
-
In a stand mixer fitted with the paddle attachment (or in a bowl), combine flour, sugar, cocoa powder, and salt on low until evenly mixed.
-
Add melted butter and mix on low until the mixture holds together in small clumps.
-
Press the chocolate crumbs into the bottom of the pan evenly using the back of a spoon or fingertips. Bake 10–12 minutes until firm and cookie-like.
For the Cookie Dough
-
Preheat oven to 165°F. Spread the flour on a parchment-lined sheet pan and bake 7–10 minutes to heat-treat. Cool completely.
-
Cream butter and sugars with a rubber spatula until light and fluffy, about 3 minutes (avoid over-aerating).
-
Mix in vanilla until combined.
-
Add the cooled, baked flour and salt, mixing until incorporated.
-
Fold in mini chocolate chips.
-
Reserve half the dough to press between crust and cheesecake; use the remainder for the top layer.
-
Wrap the top cookie dough portion in plastic and press it into an 8-inch pan to form a disc; set aside.
For The Cheesecake Filling:
-
Preheat or lower oven to 325°F. Pour water into a roasting pan so it reaches just under halfway up the sides of the springform pan; set aside.
-
Beat room-temperature cream cheese on medium until smooth and creamy with a hand mixer or stand mixer.
-
With the mixer on low, gradually add granulated sugar and beat until smooth.
-
Add egg yolk and whole eggs on low and mix just until combined. Scrape the bowl with a rubber spatula.
-
Fold in a pinch of salt and mini chocolate chips, ensuring the batter is smooth without overmixing.
-
Press half the cookie dough evenly onto the baked chocolate crust, smoothing to the edges.
-
Pour the cheesecake batter over the cookie dough and smooth the top. (Optional: wrap the bottom of the springform with foil to prevent water seepage.) Place the pan in the prepared water bath.
-
Bake 40–43 minutes until the center is barely set and slightly jiggly. If still very loose, bake an extra 5 minutes. Avoid browning the top.
-
Let the cheesecake rest 10–15 minutes, then chill in the refrigerator at least 4 hours or overnight to fully set.
Assembly
-
Once set, remove the cheesecake from the springform and prepare to finish.
-
Whip heavy cream with sugar until stiff peaks form.
-
Place the reserved cookie dough disc on top of the cheesecake, add small dollops of whipped cream, and sprinkle with extra chocolate chips to finish.
