Air fryer corn ribs are a playful, flavorful side dish made from fresh ears of corn. Cut into rib-like wedges and roasted in the air fryer, they offer a tasty and convenient way to enjoy summer corn.

Fresh corn is one of my favorites—the juicy kernels, the nostalgic fun of eating it, and of course, the butter. While corn on the cob is classic, corn ribs are a newer favorite: they’re easier to hold, fun to eat, and curl slightly while roasting, which makes them look appealing on the plate. Finish them with butter, your favorite seasonings, or a dipping sauce.

- 1 ear of corn, shucked
- 1 tablespoon oil
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- Pinch of salt
How to make air fryer corn ribs
Start with a stable cutting surface. Trim the very top and bottom of the ear of corn so both ends are flat. That makes it easier and safer to cut.
Next, cut the corn into ribs. You can either halve the ear for shorter ribs (yielding about 8 smaller ribs) or leave it whole for longer ribs (about 4 ribs). In this version, the ear is cut in half and then each half is quartered to make eight pieces.

To prevent slipping while you slice, place a kitchen towel under the ear of corn. Cut each half into four wedges by standing the half on its side and slicing down through the cob to separate the kernels into rib-shaped pieces.

Place the corn ribs in a large bowl, drizzle with oil, and sprinkle on the smoked paprika, garlic powder, and salt.

Toss gently to coat the ribs evenly in oil and spices.

Arrange the seasoned ribs in a single layer in your air fryer basket. Try not to overcrowd the basket so air can circulate and the ribs roast evenly.

Air fry at 400°F (about 200°C) for 10–12 minutes, shaking or flipping the ribs halfway through so they brown evenly. Cooking time may vary slightly by air fryer model and how charred you prefer your corn.
When done, transfer the corn ribs to a plate and serve immediately with butter, compound butter, or your favorite dipping sauce.

Shuck the corn and remove silk. Trim the top and bottom so each end is flat.
