Decadent Chocolate Cookie Recipe for Two: Ready in 20 Minutes

Sometimes you don’t want to bake an entire batch of cookies. That’s where this recipe for Chocolate Cookies for Two comes in. If you love chocolate, these are a quick and satisfying treat — and they hide a little surprise in the center. What’s inside? Half a chocolate bar pressed into each cookie so you get a gooey center when served warm, or a soft chocolate center when cooled to room temperature.

If you want to go all out, drizzle warm hot fudge over the top for an extra chocolate hit. These cookies are rich and indulgent — a perfect one-night dessert that’s worth every bite.

I added a pop of color with peanut butter–filled candies for contrast. They complement the chocolate nicely, but you can swap them for chocolate chips, mint chips, caramel pieces, or any candy you have on hand.

Ingredients

  • 1/4 cup butter, room temperature
  • 1/3 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour, plus 2 tablespoons
  • 1/4 teaspoon baking powder
  • 1 chocolate bar (split between the two cookies)
  • 2 tablespoons peanut butter–filled candies (or substitute)
  • Hot fudge topping, optional

Instructions

  1. Preheat the oven to 350°F (175°C). Spray two 4.5-inch pans with non-stick cooking spray.
  2. In a large mixing bowl, beat the butter with the granulated and brown sugars on medium until combined.
  3. Add the egg and vanilla extract and beat until incorporated. Scrape down the sides of the bowl.
  4. Add the cocoa powder, flour, and baking powder. Beat until the dry ingredients are mixed in, then stir to incorporate any remaining flour.
  5. Divide the dough into four equal portions.
  6. Place one quarter of the dough into the first prepared pan.
  7. Split the chocolate bar in half and gently press half into the dough in the pan.
  8. Add another quarter of the dough on top of the chocolate, pressing the dough to the pan sides to completely cover the chocolate bar.
  9. Repeat the process with the second pan and the remaining dough and chocolate.
  10. Sprinkle the peanut butter–filled candies on top, or substitute with your preferred topping.
  11. Bake for 18–19 minutes, until the cookies are set around the edges.
  12. Remove from the oven and, if desired, drizzle with hot fudge topping.
  13. Serve warm for a gooey center or at room temperature for a softer but still melty filling.

Notes

Store any leftover cookies with hot fudge in an airtight container in the refrigerator for up to 3 days.
