What makes them “posh”? Use good-quality sausages with a high meat content, add a layer of caramelised onion chutney and scatter small cubes of mature cheddar before wrapping in flaky puff pastry.

Posh sausage roll ingredients
- 1 packet of puff pastry sheet (around 320g)
- 6 good-quality sausages
- 80g mature Cheddar, cut into small cubes
- 6 tsp caramelised onion chutney
- 1 egg, beaten (for egg wash)

How to make posh sausage rolls
- Preheat the oven to 200°C (400°F / Gas Mark 6). Lightly grease a baking sheet or line it with baking paper.
- Unroll the puff pastry and cut it into six equal rectangles.
- Spoon about 1 tsp of caramelised onion chutney down the centre of each rectangle, then scatter the cubed Cheddar over the chutney.
- Remove the sausage meat from its skins: slice each sausage lengthways and push the meat out of the casing. Place a portion of sausage meat on top of the cheese and chutney.
- Brush the pastry edges with beaten egg, fold the pastry over the filling and press to seal.
- Place the rolls seam-side down on the prepared tray, brush the tops with more egg and score the top a couple of times to let steam escape.
- Bake for about 35 minutes, until the sausage meat is cooked through and the pastry is golden and puffed. Allow to rest a few minutes before serving.
These are lovely served warm with mustard, pickles or a simple salad.
