This recipe started with a 12-ounce package of chicken thighs, sliced into strips — that yields about 3 ounces of cooked chicken per serving when divided into four servings. You can adjust the amount of chicken, but remember to recalculate calories and macros if you change the quantity.

We prefer thighs for flavor, but swap in chicken breasts if you want to save a few calories for a stricter deficit.

I sliced a medium onion and three bell peppers (different colors) into strips and used a fajita seasoning. Pre-made fajita seasoning is convenient, but I mixed a quick homemade blend for this batch.

Homemade fajita seasoning:

  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground cumin
  • 1 tablespoon corn starch

Ingredients

  • 12 ounces chicken thighs sliced
  • 1 medium onion sliced
  • 3 medium bell peppers sliced

Fajita Seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground cumin
  • 1 tablespoon corn starch

Assemble with

  • 8-10 leaves lettuce
  • 4 tablespoons light sour cream

Instructions

  • Heat a skillet and spray lightly with cooking spray. Add sliced chicken and cook until no longer pink.
  • Add sliced peppers and onion. Cook 4–5 minutes until vegetables are tender.
  • In a small bowl, mix the fajita seasoning ingredients.
  • Sprinkle the seasoning over the chicken and vegetables. Add a little extra spray if the pan is dry.
  • Stir and sauté until everything is evenly coated and heated through.
  • Scoop the chicken and veggies onto lettuce leaves and top with 1 tablespoon light sour cream per serving.
