This easy and delicious banana bread is simple to make and perfect for using up ripe bananas.

Ingredients

  • 2 cup gluten-free flour mix
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp guar gum
  • 2 large bananas, puréed
  • 1 1/4 cup sugar
  • 2 eggs
  • 1/2 cup butter, softened
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine the dry ingredients: gluten-free flour mix, baking powder, salt, cinnamon, and guar gum.
  3. In a separate bowl, cream together the sugar and softened butter. Beat in the eggs, vanilla, and mashed bananas until combined.
  4. Stir the wet mixture into the dry ingredients until just combined; do not overmix.
  5. Pour the batter into a greased loaf pan and bake about 30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Remove from the oven and let cool for about ten minutes. Loosen the edges with a knife and transfer the loaf to a cooling rack to finish cooling.
  7. Slice and enjoy.
