- 130g vanilla wine biscuits (or similar tea biscuits)
- 65g butter
- Filling

- 65g caster sugar
- 1 teaspoon vanilla extract
- 150ml cream
- 1½ teaspoon gelatine
- 1 tablespoon boiling water
- Topping
- 200ml cream
- 1½ tablespoons icing sugar

- Strawberries, hulled and halved
- Kiwi fruit, peeled and sliced

- Prepare a 20cm round springform tin by lining the base and sides with foil or cling film; set aside.
- Place the vanilla wine biscuits in a food processor and blitz until they become a fine crumb.
- Melt the butter in a small saucepan, then mix it through the biscuit crumbs until evenly combined. Press this mixture firmly into the base of the prepared tin to form an even crust. Chill in the fridge while you make the filling.
- Whip 150ml cream to soft peaks with a hand-held beater and set aside.

- Cover and chill the cheesecake in the fridge for a minimum of 4 hours or overnight. You can also freeze it up to a week in advance; thaw in the fridge before decorating.
