Can you believe it’s already May? So much is happening this month that I’m excited to share. I signed a lease on a new apartment and will be moving in July — I can’t wait to show the space as summer approaches. One of the highlights from my search was finding a place with a bright white kitchen, which made the decision easier.

With warmer weather comes lighter, fresher recipes, so I’ll be sharing more seasonal dishes soon.

And of course, Cinco de Mayo is coming up — this salted margarita popcorn is my festive contribution. If margaritas are your go-to, you’ll love this snack: salty, bright with lime zest, and made with only four ingredients — popcorn kernels, coconut oil, sea salt, and lime zest.

Stovetop popcorn is a simple, healthier alternative to microwave bags. It takes a little more time, but you gain complete control over the ingredients and avoid artificial flavors and preservatives. For best results, heat the oil over medium-high to get the pan hot, then finish popping at a slightly lower temperature so the kernels pop evenly.

Description

Popcorn tossed with sea salt and fresh lime zest for a bright, margarita-inspired snack.


Ingredients

  • 2 tbsp coconut oil, melted
  • 1/3 cup popcorn kernels
  • 1/4 tsp sea salt
  • zest of one lime

Instructions

  1. Heat 1 1/2 tablespoons of the coconut oil in a pot over medium-high heat.
  2. Reduce heat to medium and add one popcorn kernel. When it pops, the oil is ready.
  3. Add the remaining kernels, cover the pot, and shake occasionally so kernels heat evenly and don’t burn.
  4. When popping slows and most kernels have popped, remove from heat. Stir in the remaining 1/2 tablespoon of coconut oil, the sea salt, and the lime zest.
  5. Serve immediately for best texture and flavor.

Notes

If kernels aren’t popping well, raise the heat slightly. For a stronger lime flavor, add more zest. Taste and adjust salt to preference.
